| Dill is a favourite seasoning for salmon; here, it's complemented by spicy mustard seeds and cumin. Mayonnaise helps the spices adhere to the salmon, adds moistness and prevents the fish from sticking to the grate. |

Ingredients

|
1/4 cup (50 mL) mayonnaise |
|
|
|
1 tbsp (15 mL) plain yogurt |
|
|
|
2 tsp (10 mL) mustard seeds |
|
|
|
Pinch (or to taste) cayenne pepper |
|
|
|
1 1/2 tsp (7 mL) ground cumin |
|
|
|
1/2 cup (125 mL) chopped fresh dill |
|
|
|
3/4 tsp (4 mL) salt |
|
|
|
1 tbsp (15 mL) lemon juice |
|
|
|
6 salmon fillets (6 oz/175 g each), skin on, or 6 salmon steaks |

Preparation
|
|
Combine mayonnaise, yogurt, mustard seeds, cayenne, cumin, dill, salt and lemon juice in a large bowl. (Can be made several hours in advance, covered and reserved in refrigerator.) Add salmon to mayonnaise mixture and turn to coat evenly.
Preheat grill to medium-high (or preheat broiler). Grill salmon, skin side up, for 3 to 4 minutes. Turn and cook for 3 to 4 minutes longer or just until middle of salmon is opaque when pierced with small knife. Transfer to a serving platter or individual plates.
