| Serve these flavourful kabobs in warmed pitas with sliced tomato, lettuce and the chive yogurt. The kabobs are hot and peppery, so if you prefer them mild, reduce the pepper. |

Ingredients

|
1 lb (500 g) lean ground beef |
|
|
|
4 cloves garlic, minced |
|
|
|
1-1/2 tsp (7 mL) ground coriander |
|
|
|
3/4 cup (175 mL) Balkan-style yogurt |
|
|
|
2 tbsp (30 mL) finely chopped fresh chives or mint |
|
|
|
2 tsp (10 mL) lemon juice |
|
|
|
Pepper, salt and extra-virgin olive oil |

Preparation
|
|
Mix beef with garlic, coriander, 1 tsp (5 mL) pepper and ½ tsp (2 mL) salt. Using dampened hands, form into 8 cylinders, about 1-¼ inches (3 cm) in diameter.
Slide skewers lengthwise into kabobs almost all the way through. Place on greased baking sheet; broil, turning once, until browned and no longer pink inside, about 5 minutes. Or grill skewers over medium heat. Tent with foil; let stand for 5 minutes.
Meanwhile, in bowl, mix together yogurt, chives, lemon juice and pinch salt. Drizzle with 1 tbsp (15 mL) oil. Serve with kabobs.
