Garlic Beef Kabobs with Chive Yogurt

Serve these flavourful kabobs in warmed pitas with sliced tomato, lettuce and the chive yogurt. The kabobs are hot and peppery, so if you prefer them mild, reduce the pepper.

Ingredients

• 

1 lb (500 g) lean ground beef

• 

4 cloves garlic, minced

• 

1-1/2 tsp (7 mL) ground coriander

• 

3/4 cup (175 mL) Balkan-style yogurt

• 

2 tbsp (30 mL) finely chopped fresh chives or mint

• 

2 tsp (10 mL) lemon juice

• 

Pepper, salt and extra-virgin olive oil

Preparation

Mix beef with garlic, coriander, 1 tsp (5 mL) pepper and ½ tsp (2 mL) salt. Using dampened hands, form into 8 cylinders, about 1-¼ inches (3 cm) in diameter.

Slide skewers lengthwise into kabobs almost all the way through. Place on greased baking sheet; broil, turning once, until browned and no longer pink inside, about 5 minutes. Or grill skewers over medium heat. Tent with foil; let stand for 5 minutes.

Meanwhile, in bowl, mix together yogurt, chives, lemon juice and pinch salt. Drizzle with 1 tbsp (15 mL) oil. Serve with kabobs.

Makes 4 servings.
