|
Oats, nuts, apples and pears make a very healthy combination, especially when sweetening is kept to a minimum.
|

Ingredients
|
|
|
4 cups (1 L) sliced peeled apples |
|
|
|
2 cups (500 mL) sliced peeled pears |
|
|
|
1/4 cup (60 mL) currants |
|
|
|
1/4 cup (60 mL) brown sugar |
|
|
|
2 tbsp (30 mL) whole wheat flour |
|
|
|
1/2 tsp (2 mL) grated lemon rind |
|
|
|
1-1/2 tbsp (22 mL) lemon juice |
|
|
|
1/4 cup (60 mL) liquid honey |
|
|
|
3 tbsp (45 mL) apple cider |
|
|
|
3 tbsp (45 mL) almond butter |
|
|
|
1/2 tsp (2 mL) cinnamon |
|
|
|
Pinch salt |
|
|
|
2 cups (500 mL) large-flake rolled oats |
|
|
|
1/4 cup (60 mL) sliced almonds |
|
|
|
3 tbsp (45 mL) shelled sunflower or pumpkin seeds or sliced almonds |

Preparation
|
|
In 8-inch/2 L square baking dish, mix apples, pears, currants, sugar, flour, lemon rind and juice. Cover with foil and bake in 375°F/190°C oven until mixture is bubbling and apples are just about tender, 35 to 40 minutes.
Meanwhile, in small saucepan over medium heat, stir together honey, cider, almond butter, cinnamon and salt until thoroughly mixed. Scrape into bowl; mix in oats, almonds and sunflower seeds. Spoon over apple mixture. Reduce heat to 350°F/180°C; bake, uncovered, until topping is crispy, about 20 minutes.
Makes 6 to 8 servings.
