Mary's Chicken Soup

Ingredients

• 

3 medium (or two large) quarters of chicken, or a small boiling chicken

• 

1 tsp (5 mL) salt

• 

2 stalks celery (chopped) and leaves (tied)

• 

1 large onion, chopped

• 

3 carrots, sliced

• 

1 large potato (or two medium)

• 

1 package of cooked, medium-sized egg noodles

Preparation

Place the chicken in a large pot half-filled with water. Cover, bring to a boil and dump out water.

Cut off as much fat as possible from the meat and put it back in the pot, filled with fresh water. Bring to a boil and skim off foam. Add salt, celery and leaves, onion and carrots.

Cook for 1-1/2 hours, then add potatoes. Cook for another half hour and remove meat. Serve with egg noodles.
