Ingredients
|

|
3 medium (or two large) quarters of chicken, or a small boiling chicken |
|
|
|
1 tsp (5 mL) salt |
|
|
|
2 stalks celery (chopped) and leaves (tied) |
|
|
|
1 large onion, chopped |
|
|
|
3 carrots, sliced |
|
|
|
1 large potato (or two medium) |
|
|
|
1 package of cooked, medium-sized egg noodles |
|

Preparation
|
|
Place the chicken in a large pot half-filled with water. Cover, bring to a boil and dump out water.
Cut off as much fat as possible from the meat and put it back in the pot, filled with fresh water. Bring to a boil and skim off foam. Add salt, celery and leaves, onion and carrots.
Cook for 1-1/2 hours, then add potatoes. Cook for another half hour and remove meat. Serve with egg noodles.
