Deep-Fried Calamari

Serve these crispy deep-fried squid rings to dip in tzatziki sauce.

Ingredients

• 

2 lb (1 kg) frozen cleaned squid

• 

1/2 cup (125 mL) all-purpose flour

• 

3 tbsp (45 mL) cornstarch

• 

1/2 tsp (2 mL) cayenne pepper

• 

Vegetable oil for deep-frying

• 

Salt

• 

Lemon wedges

Preparation

Thaw squid; drain well. Cut tubes into ½-inch (1 cm) rings. In resealable plastic bag, combine flour, cornstarch and cayenne. Add squid rings and tentacles to bag; shake to coat.

In deep fryer or deep heavy-bottomed pot, heat oil to 425°F (220°C); cook squid, in batches, until golden, about 30 seconds. Drain on paper towels; sprinkle with salt to taste. Serve with lemon wedges.

Makes 4 to 6 servings.
